Impact of Food Safety Principles on Mfg Processing Equipment
(Webinar length:  1h 24m)

Overview:

This webinar will focus on safety issues that may potentially impact performance of
processing equipment and slow down technology commercialization. Sanitary principles,
process control and validation, and other equipment issues that must be considered and
addressed in regards to its design, operation and distribution will be discussed to facilitate
technology implementation. Many examples of successful research collaborations and
consortiums of key players that resulted in facilitation of regulatory approvals of novel
technologies will be provided.

Successful commercialization of innovative food processes depends on interdisciplinary
interaction of academia, private and government research organizations, regulatory agencies,
food producers, including major corporations and SMEs, with manufacturers of equipment at
different steps of technology development. Activities of universities and governmental
organizations mainly focused on conducting basic research and proof of concept studies
using bench top or pilot equipment. If these initial steps of technology and application are
successful, process validation and demonstration of economical feasibility, evaluation of
process efficacy and equipment validation are to be demonstrated for specific product in the
pilot or full production scale. At this step, in addition to achieving required  process
performance, proofs that equipment can consistently produce a product meeting its pre-
determined safety specifications and quality are required. The issues of equipment
scalability, validation and verification, treatment uniformity, process control and
instrumentation, sanitary design have to be addressed by equipment makers in order to
mitigate risks and improve safety during production and processing. The effects of variation
of critical product and process parameters on process efficiency need to be established in
equipment specifications along with reliable means of their control.

Learning Objectives:

Understand critical food safety issues for technology development and implementation that
can be successfully addressed by equipment manufacturers
Understand basic principles of validation and verification of process and equipment
Understand principles and issues of sanitary design to improve equipment performance
Learn about regulatory requirements and standards for approval of novel processes that can
be addressed by equipment manufacturers

Who will benefit:

Quality Assurance Managers
Research & Development Managers
Production Managers
Processing Engineers
Operations Supervisors and Managers
Plant Managers

Presenter--Dr. Tatiana Koutchma

Dr. Koutchma is currently a Research Scientist in Novel Food Processing, Agriculture and
Agri-Food Canada (AAFC), Government of Canada.

She is an internationally recognized expert in ultraviolet light, high hydrostatic pressure
processing, and microwave heating. In 2009 she completed her first book on the application
of ultraviolet technology for foods entitled “Ultraviolet Light in Food Technology: Principles and
Applications”. She has published over 50 peer-reviewed manuscripts and more than 10 book
chapters.

She is a graduate of Moscow State University of Food Production. In 2000, she was
appointed a Research Professor at the National Centre for Food Safety and Technology at
the Illinois Institute of Technology in Chicago, USA. In 2008, she joined the AAFC with focus
on research related to production of safe and healthy foods, development of risk mitigation
strategies, with the transfer of her knowledge and experience to government and industrial
partners.

She is an Associate Editor of “Food Science and Technology International” journal, a member
of the Editorial Boards of the Journal of Food Processing Technology” and “Food and
Bioprocess Technology”, a vice-chair of the CIGR Food Safety Working Group, and a special
faculty of the Food Science Department of University of Guelph.
