Norovirus Contamination & Control

Overview:

According to the Centers for Disease Control and Prevention, norovirus (“NoV”) is the leading
cause of acute gastrointestinal disease and the leading cause of foodborne illness outbreaks
in the US today. NoV is a particularly difficult virus to control as the transmission pathways
includes airborne routes, fomites, person to person, food and water. Its non-enveloped
morphology allows it to remain active when other less refractory bacteria and virus would be
inactivated. Typical sanitizing methods are ineffective and improper cleaning can spread the
virus. NoV may persist for weeks in the environment and can be spread easily.

Identification and the control of NoV must begin very early in the outbreak in order to prevent
the further spread and amplification of the virus. The best defense against this agent is a
sound program for dealing with contamination if it should occur, and a system for rapidly
identifying and investigating outbreaks.

Roy E. Costa, R.S, M.S (M.B.A)., President of Environ Health Associates, is a Registered
Sanitarian with over 30 years of experience in the field of disease prevention, public health,
and education.

He has conducted over 10,000 inspections of public facilities, including restaurants,
supermarkets, processing plants, convenience stores, prisons, outdoor events, schools,
institutions, water plants, sewage plants. As an environmental investigator he has performed
over 100 epidemiological investigations of illness outbreaks. He has published more than 50
articles and technical reports and has been interviewed for national television, radio, and
newspapers more than a dozen times. Mr. Costa has served as both the Past President of
the Florida Association for Food Protection, as well as the Florida Environmental Health
Association.
